30 Day Blog Challenge + Cilantro Lime Dip

I found this challenge at Can I Get Another Bottle of Whine.  I think it’s an excellent challenge to try and a great way to start the new year off.  I will try to answer a question every day, starting in January, in my posts…they may not be in order as I see a few that are going to take some time to think through.

Today the boys and I went to explore a little piece of history right next to the golf course here.  A cave that was once used during WWII…apparently as a dispensary.  It was small and gated off but very interesting to see something from that time period and imagine how it played a part in what happened.

According to the plaque that was at the beginning of the trail, not much was changed since that time.  It was found with cots, litters and medical supplies left by the Japanese during the raid on Okinawa.  The natural caves were occasionally modified for use.

Now for that dip.  I made this to go with some spicy sweet potato fries we had for dinner.  It went well with the chicken wings we had as well.  If you’re looking for something to offset the hot then this has a cooling effect without stealing the show!

Cilantro Lime Dipping Sauce:

1 c sour cream
1/2 tsp True Lime (or 1 tbsp lime juice)
1 tbsp cilantro
1 tsp sea salt
1/2 tsp lime peel (can be omitted)
Place all ingredients into a bowl and mix together.  Let sit for at least 10 minutes before serving.  (Can be made the day before.)
Use for dipping those spicy things you love or even topping some of those potatoes! 😉
