It’s time to share! I like sharing…especially when it’s about food. WIAW time…thanks Jen (Peas and Crayons) for hosting. (Super glad you’re feeling better!)
I started off with a new yummy breakfast…Protein PB2 ChocoChip Oats. This packs a 1, 2 punch of healthy and filling. (Not to mention the peanut butter chocolate combo…oh so good!) Recipe below. And of course my coffee!
Protein PB2 ChocoChip Oatmeal
1 tbsp water
1/2 scoop vanilla protein powder
1/2c quick oats
1 c water
1/2 tsp cinnamon
Splash vanilla extract
Mini chocolate chips
In a small bowl combine the PB2 and protein. Stir in tbsp water, set aside.
In microwave safe bowl add oats, cinnamon, and salt. Stir to mix. Pour in water and splash of vanilla mixing to combine. Place in microwave and heat for 1 1/2-2 minutes. Remove and stir. Let sit for one minute. Top with PB mixture and chocolate chips. Swirl and consume.
I was bad at lunch…skipped it. I had a few Hint of Lime Tortialla Chips with some bean dip before heading to pick up K for a dental appointment. Some snacks were a pineapple ring, Peeled Snacks -Mango, and a few Okinawan cookies.
Dinner was some Half Homemade Tomato Soup with Grilled Cheese Sandwich. (Shhh…I threw some collard greens into the soup for extra healthy goodness-Jen would be pleased 😉 )
K had a dental appointment today and got to sport these awesome shades and bib. The happy juice they gave him made for quite the entertainment. We were sure The Hulk was about to explode from his body until he would break into giggles.
During my run yesterday I stopped to check out these sites that we’ve seen along the road a few times. After some inspection (reading the sign) I found they are old bomb bunkers. It is awesome to be in a place that has such a varied and long history. (P.S. Most weren’t ever hit directly as the jungle around them hid the shelters from view so well that aerial photography never picked them up.)
