It’s Wednesday again! Time is flying by…it’s almost March! Only one more WIAW for this month and soon it’ll be time for a recap. Ack!
I am still on my oatmeal kick! Oatmeal, PB2, Protein, coffee, water, and mini chips…delicious and nutritious. Who could ask for more? Not to mention warm on the tummy.
Lunch was a leftover egg roll from the other night and some unpictured spaghetti squash spaghetti. (Squash mixed with red wine meat sauce, last nights dinner.) I tried the squash with the kids and it wasn’t a big hit. Maybe next time I will sneak them into the sauce…blend it up and toss it in. Shhhh. I can get them to eat the cabbage…deep fried with a crispy shell. ^_-
Dinner was this flaky lemony-dill tilapia with curry spiced rice and peas. A side of pineapple (also unpictured…oops) to help round out the meal. I have been trying to sneak in a serving of fruit with each dinner.
It came out a little blander than I had hoped. Next time I will double the seasoning on the fish.
Snack was a few pieces of this luscious chocolate. Love the caramel sea salt! (Chocolate is originally from a bean right…so veggie?) No need to sneak that one.
I also managed to eat a few of these tasty treats. Cinnamon Chip Oatmeal Raisin Rounds. I took out some of the sugar and subbed in apple sauce to keep them moist and the addition of the cinnamon chips ups the sweetness. A little coconut flour makes these mounds as they don’t spread out.
A little crunchy and lightly browned on the outside, moist and chewy on the inside!
Cinnamon Chip Oatmeal Raisin Mounds
- 1/2 cup (1 stick) butter, softened
- 1/2 cup firmly packed brown sugar
- 1/4 cup granulated sugar (I used raw)
- 1/2 cup applesauce
- 2 eggs
- 1 teaspoon vanilla
- 1-1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon apple pie spice (opt)
- 1/2 teaspoon salt (opt)
- 1/4 cup coconut flour
- 3 cups Oats, uncooked
- 1 cup raisins
- 1/2-1 cup cinnamon chips
Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs, apple sauce and vanilla; beat well. Combine flours, baking soda, cinnamon and salt; mix well. Mix into wet ingredients. Add oats, cinnamon chips and raisins; fold just to combine.
Drop dough by rounded tablespoonfuls onto parchment paper lined cookie sheets. (I used a scoop to get a nice even amount and roundness.)
Bake 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
I think next time I make these I will add some nuts! Pecans perhaps?! Yum.
