WIAW- Apple Pie Burritos

It’s Wednesday and I know it’s WIAW…however, it’s been a long day and I totally didn’t photo any food these last few days with the exception of these super easy, and super delicious apple pie burritos.20130507-202303.jpg

I promised the recipe in my post yesterday (for Monday) so here it is…

Apple Pie Burritos:

1 can apple pie filling

1 pkg tortilla (10)

1/2 stick butter, melted in shallow bowl

1/2 c sugar + 1 tbsp cinnamon, mixed in shallow bowl

Heat oven to 350.  Line baking sheet with silpat or parchment paper.

Place 2 tbsp pie filling in top portion on tortilla and roll into burrito.  Hold the seam and roll in butter then sugar mixture.  Place seam side down on baking sheet.  Continue until all tortillas are wrapped, dipped, and sugared.  Bake for 10 min.  Turn oven to broil, leave pan on lower rack and allow tops to brown…approx 5-10 minutes.  (Watch closely so they don’t burn.)  Remove from oven and let cool slightly.  (Or wait just long enough to be able to pick up and munch down!)

These make the house smell great, taste even better and are a quick and easy dessert.  Add a scoop of vanilla ice cream and a drizzle of caramel syrup for an extra decadent treat.  So not necessary though…these are super good warm out of the oven all by their lonesome.

After downing just a few (ok, maybe a few after a few) I definitely had to get in some sweat{pink}!  A decent run in the sun was just the ticket.  Still trying to workout those Vibram’s.  It’s getting easier with time but my calves are still yelling at me if I go more 2 miles.

Time to get some sleep…0’dark early morning comes really quick lately.
